  • butter 170 gr.

For the base sauce for 1 lazy dumpling:

  • bell pepper 1 piece
  • carrots 1 pc.
  • salt 1/2 teaspoon
  • bay leaf 1 piece
  • hops-suneli 1/2 teaspoon
  • water 2-3 glasses

Lazy dumplings - step-by-step recipe with photos

So, we make the dough the same as for regular dumplings. The dough turns out very tender, soft, but it can be rolled out thinly, it does not tear.

Melt the butter in a frying pan on the stove, fry the spices for 20-30 seconds,

add cabbage.

Fry and simmer for about 15 minutes. Add dill, salt, sugar, lemon juice.

Stir, the filling is ready.

Now divide the dough into three parts. Roll out each part, preferably in the form of a square,

We lay out a third of the filling, distribute it over the entire dough, leaving a couple of centimeters on each side.

Now we roll it up,

We interlock the edge along the entire roll and connect the ends.

Now melt the butter in a frying pan, fry the grated carrots and chopped peppers. (I used large pieces of pepper, since it was not fresh, but from the freezer, I put it as it was, you can cut it smaller.)

Place the roll on this vegetable base, add water so that the roll is 3/4 in water.

Throw in the bay leaf, add salt, and sprinkle the top of the roll with khmeli-suneli (I went a little overboard with the amount of khmeli-suneli, but please follow the recipe ;)).

Bring to a boil, reduce heat to medium, cook for 30 minutes with the lid closed.

It’s difficult to say how many servings one roll will be enough for, it flies away with a bang... If there are more than three of you, then it’s still better to cook 2 or 3 rolls at once :)

Vegetarian lentil dumplings




Hare Krishna, my dears... No preamble today. Lentil dumplings are to die for :) Good luck!!!


So, for vegetarian lentil dumplings we will need

Dough:

4 tablespoons of ghee (clarified butter);

1 glass of milk, water or whey;

1 teaspoon salt;

0.5 teaspoon sugar;

1 cup whole grain wheat flour;

1 cup rye flour;

2 cups regular flour (lentil dumplings will turn out delicious, but, as you know, regular flour is not entirely healthy).

Filling:

200 ml marsh green or golden lentils;

90 grams of cheese - I used smoked Adyghe cheese, you can take a braid - suluguni or "health" cheese, you can also fry regular Adyghe cheese until golden brown);

50 grams of arugula or any other leafy green;

50 grams of dill;

Other seasonings to suit your taste - these can be bay leaf (put in the pan during cooking), curry, pepper, salt, asafoetida.


Cooking dumplings

At least 6 hours before starting to prepare lentil dumplings, you need to pour water over the lentils and let them settle.

Pour the dry ingredients into the pan, stir, then pour in the melted butter - ghee. After this, you need to pour boiling water, and you need to do this in a weak stream and stir at the same time. Next, the dough should cool. In order not to waste time, you can start preparing minced meat.

For minced meat, grind the lentils that we left in the water, for example, with a blender or through a meat grinder, mix with chopped herbs. This mixture needs to be fried a little in oil, add salt and spices to taste. There is room here to unleash your imagination in terms of spices and herbs;) Then add coarsely grated vegetarian cheese here, stirring.

The cooled dough needs to be kneaded thoroughly until it becomes elastic. At the same time, if necessary, sprinkle the table with flour. After the dough is kneaded and ready, you need to leave it for about 15 minutes. Roll out the finished dough and sculpt, sculpt, sculpt...

Place our lentil dumplings, as well as seasonings to taste, in a saucepan with boiling water. Add bay leaf, allspice and salt. My dumplings floated to the surface within 6 minutes. Drain the water.

Transfer the boiled lentil dumplings to a deep ceremonial plate or bowl. It’s delicious to pour some mega-sauce of your own invention over the dumplings. And if you’re lazy, then just pour olive oil or melted butter (sour cream, cream) over them, but just so that they don’t stick together :) You can also sprinkle with dried or fresh herbs.

This time I will introduce you to a wonderful recipe. Lentil dumplings are a great dish! I personally ate two servings at a time (and I wasn’t even too lazy to cook it). I highly recommend adding bay leaves to the water during cooking, and serving the dumplings themselves with. By the way, minced meat can also be used as a filling for chebureks, and if you don’t want to bother with the dough, then just fry vegetarian cutlets. Only in the latter option there is no need to add oil; instead, add a little flour (1/2 - 1 cup) so that the minced meat sticks together. Cooking time– 120 min.

Quantity– 120 pcs.

We will need:

  • dumpling dough. I did a simple one, as in, only you will need 250 ml of water.
  • 1/2 cup lentils (soak overnight or boil);
  • 1 small zucchini or piece of pumpkin;
  • 2-3 potatoes;
  • 1 tbsp. l. vegetable oil;
  • salt and spices to taste (I used 1/3 tsp each of black pepper, asafoetida and coriander).

It’s better to soak the lentils overnight, but yesterday I didn’t think that I would be making dumplings, so I boiled the lentils. I took 2 stacks. water and cook for 15-20 minutes. The lentils should not be boiled, it is better if they are a little hard.

Throw the lentils into a sieve, and together with the potatoes (raw) and zucchini, pass through a vegetable grinder, or grind in a blender. If the minced meat turns out wet, place it on a sieve. You can also add 1 tbsp. l. decoys.

If suddenly the minced meat remains, you can knead a little more dough. Place the dumplings with lentils on a baking sheet (place parchment paper between the layers) and put them in the freezer until needed.

Once in demand, cook in salted water with bay leaves for 7-13 minutes, remove with a slotted spoon and add a piece of butter (optional). Vegetarian dumplings are delicious to eat dipped in cold tomato juice.

Ingredients for 120 pieces of small dumplings:

Soak the lentils in water overnight. In the morning, rinse under running water. Dry a little with a towel and grind into puree in a blender or meat grinder.

Separately, grate the vegetables on a coarse grater, add salt and leave for 5-7 minutes. Squeeze out the released juice.

Mix vegetables with lentil puree, add all the spices and mix thoroughly. Ready! You can roll out the dough and start making dumplings.

Minced meat from green lentils with rice for cutlets or meatballs

This minced meat is good because, while remaining very juicy and rich, it does not spread over the frying pan or baking sheet, thanks to which, even during stewing, the meatballs remain even and without cracks. It’s easy to turn the “hedgehogs” over with a spatula and fry on all sides.

Soy minced meat for dumplings or pancakes

This is perhaps one of the most simple recipes in our selection. To prepare minced soybean for dumplings or stuffing zraz, pancakes, pies, we will need:

  • 1 pack soy mince or 1 glass;
  • 1 large carrot;
  • 1 large onion;
  • 2 cloves of garlic;
  • ½ tsp. ground nutmeg;
  • ½ tsp. smoked paprika;

  • 0.5 cups fried mushrooms (very tasty with white ones);
  • 1 carrot, grated;

  • 1 pack of tofu;

  • ½ tsp. ground ginger;

  • ½ tsp. asafoetida;
  • ½ tsp. ground paprika;
  • salt;
  • vegetable oil;

For stuffing vegetables:

  • + an equal amount of ready-made bulgur, buckwheat or rice

Fry grated carrots on a fine or medium grater in vegetable oil or ghee until softened.

Mash the tofu with a fork along with the spices. Add to the carrots and simmer covered for 3-4 minutes. If the tofu is dry, you can add a little water, or coconut cream or tomato paste if desired.

This minced tofu has the consistency of pate. So feel free to try the taste by spreading it on a slice of toasted bread.

Minced pasta navy style

And again green lentils come into play. Fragrant, richly flavored vegetarian navy pasta with vegetables and lentils.


Ingredients:

  • 0.5 cups lentils;
  • 1 medium sized carrot;
  • 1 small onion;
  • 1 clove of garlic;
  • 1-2 tbsp. l. tomato paste;
  • salt;
  • vegetable oil

Soak the beans overnight. In the morning, drain the water and wash the peas. Grind in a blender or scroll through a meat grinder. Don't make a homogeneous paste, leave some large particles.

Fry finely chopped onion and garlic in vegetable oil until tender. Then add crushed lentils, tomato paste and spices. Cover with a lid and simmer until the ingredients are completely cooked. Stir occasionally.

Then combine with boiled pasta and mix well with a spoon to coat the spaghetti with oil.

For example, now I always have homemade vegan falafel dumplings in the freezer. They require a purchased falafel mixture, but later I will show you a recipe for which simply boiled chickpeas with spices are also suitable.

If it is stated that the option is vegan, then it should be served with sauces without animal products, i.e. with vegetables, but these dumplings with sour cream or sprinkled with butter are very tasty...

Prepare the ingredients according to the recipe list. From the specified quantity, about 40-45 dumplings are obtained, depending on their size.

Prepare the falafel mixture as directed on the package, or follow the ratio in the list of ingredients.

The water for diluting the dry mixture needs to be hot (about 60 degrees). Pour it in and stir, you should get a soft sticky mass.

Leave the filling for a few minutes and work on the dough.

For the dough, simply combine and mix the ingredients together.

Then generously grease your hands with vegetable oil and knead the dough.

The dumpling dough should be soft, elastic, but not sticky. Vegan dough is ok, but I still like it better...

Thinly roll out a portion of the dough, cut it into blanks, place the filling in the center and make dumplings in the usual way and the desired shape and size.

Roll out the scraps of dough again and form dumplings until the filling is finished.

These vegan falafel dumplings can be boiled immediately or frozen on a floured cutting board for later.

Serve them with sauces to taste, you can sprinkle the dumplings with sesame seeds, pour some tasty and healthy vegetable oil, etc.
