  • 100 ml water at room temperature

  • 0.5 tsp. salt;
  • 1 tbsp. l. olive oil.

For the sauce:

  • 1 tbsp. l. tomato paste;
  • 1 tsp. dry Provençal herbs;
  • 1 tsp. olive oil;
  • salt to taste.

For the filling:

  • 4-5 pieces of champignons;
  • 100 g ham;
  • 4-5 pieces of hunting sausages;
  • 150 g hard cheese.

For decoration:

  • Greens (parsley, basil, green onions).

How to make pizza at homelike in a pizzeria:

First of all, we prepare the dough for Italian pizza, just like in a pizzeria. Sift the flour and pour it into a container that will be convenient to use with a mixer.

Add dry yeast to the flour.

Now it's time for salt and sugar.

Add unflavored olive oil.

And mix everything with a mixer.

Then add water and use the mixer again.

This completes the work of the mixer. Remove the dough from the bowl and form it into a ball with your hands.

Now get ready - you'll have to work hard. To ensure that the dough is elastic and does not stick to your hands, you will need to knead it for 7-10 minutes. It is in kneading by hand that the secret of thin pizza dough, like in a pizzeria, lies.

Now you need to send the dough to proof. We choose a container (I have a plastic container with a lid) that is large enough in size - after all, the dough will double in volume. Lightly grease the bottom of the container with olive oil and place the dough into it. Cover the container with a lid or towel and place in a warm place, protected from drafts. In the summer I put the pizza dough on the balcony, and in the winter in an electric oven preheated to 30-40 degrees.

At this point, the pizza adze can be frozen if you want to make the pizza another day and don't want to fuss with the dough. Divide the dough into two parts, wrap each part in cling film and place in the freezer. Before cooking, remove the dough and defrost at room temperature. After 40-50 minutes, the pizza dough should rise properly.

We divide our pizza dough into 2 parts.

Using a rolling pin, roll out the dough into a circle with a diameter of about 20 cm.

Mix all the ingredients for the sauce: chopped tomatoes without skins, tomato paste, Provençal herbs, olive oil. We taste it - if there is not enough salt, then add it too.

Using a spoon, spread the sauce onto the dough, backing a little around the edges.

Wash the mushrooms, cut into slices and lightly fry in a frying pan with a little olive oil.

Cut the ham into thin slices.

In total, it should take you at least 10 minutes, or even 15. Well, now the dough is ready. It turned out quite dense, but soft. It shouldn't stick to your hands. If it's sticky, sprinkle a little flour on it. workplace and knead again.

9. Now we make this “ham loaf” from the dough.

10. Divide it into 2 or 3 parts. Depending on how big your pizza pan is.

11. If you are making only one pizza, then leave one piece of dough, and put the rest in a plastic bag and put it in the refrigerator or even in the freezer, if not for one day. They will absolutely not lose their properties.

12. First, from the remaining piece of dough, we make a flat cake with our hands.

16. Turn on the oven to standard 200° for pizza, it all depends on the filling. The juicier your filling, the longer the pizza will bake, and the lower the temperature should be set, but not less than 180°. If you have a dry filling, you can set it to 220° and 240°.

7. When you have something similar to dough, you can start kneading the dough further with your hands.

8. While kneading with your hands, also pick up flour from the edges, mixing it into the dough.

9. Knead until all the flour in the cup is mixed into the dough and the dough stops sticking to your hands.

10. Our dough is almost ready.

Cover the dough with cling film and let it rest for 15-30 minutes.

4. Add a little bit of yeast into the yeast, at first you can even use a spoon, add warm water and stir all the time. You should get a homogeneous mass.

5. Be sure to add a spoonful of flour so that the yeast begins to work with the flour and mix everything thoroughly.

6. Pour the yeast mixture into the previously prepared dough.

7. We begin to add the remaining flour in parts, but not all. About half of the rest.

13. We had 500 g of flour, all of it needed to be mixed into the dough. Check the dough, if it still sticks to your hands, then you need to add a little more flour and knead. This will already be more than 500 g, but unfortunately, flour is different everywhere, a lot depends on this. And it's okay if you add a little more.

14. Pour the remaining vegetable oil onto the work surface.

4. Set aside for 10-15 minutes until a foamy cap appears. Add a teaspoon of salt to the rest of the water. Due to the fact that we have diluted the yeast in the honey solution, they are activated and the process of rising the dough will go very quickly.

5. Make a hole in the flour and pour salted water and diluted yeast into it.

6. Add a tablespoon of olive oil.

7. Knead the dough. Since flour varies from place to place, you may need a little more water. Place a glass of water nearby and you can add little by little. We needed about a couple of spoons. The dough should be tight, but not dry.

8. Pour a little oil into the bottom of the cup in which we work with the dough and grease the bowl.

9. Knead the dough until smooth and homogeneous. The dough is dense and not sticky.

10. Round the dough. Place in a greased bowl.

11. Cover the dough with a damp towel, but not wet, i.e. it must be wetted and squeezed out well. We send the dough to a warm place. I turn on the light in the oven and put it in there. And it gets warm there. You can cover it with something.

12. After 30 minutes, take out the dough. Look, it's already here. This is the result of adding good yeast in a honey solution to the dough.

13. Place the dough on the work table, punch it down and knead for another 2-3 minutes. Then round the dough again and put it in a warm place for another 10 minutes. Then it will be easier to divide it.

14. Divide the dough, look how bubbly and delicious it is inside.

15. From this amount of dough you will get 4 pizzas with a diameter of approximately 24 cm. We round each part of the dough; to do this, we gather the edges of the dough towards the center, until a smooth surface is formed. We roll up the seam.

16. Cover the rolled dough with a damp towel and leave to rest for about 15 minutes.

17. After 15 minutes, open the dough and first stretch it a little with your hands. The masters say that you need to stretch it with your hands until you get a finished cake, but I think it will be more convenient for us to do this with a rolling pin.

18. Take one part of the dough, cover the rest with a wet towel and roll it out to a thin circle with a rolling pin. Then we take the next one, etc. Cover the rolled out dough with a wet towel.

Bake the dough

19. All our dough is completely ready for baking. Now everything is as usual, lay out the filling and bake. Place a piece of rolled out dough on baking paper, stretch it slightly with your hands and grease with olive oil. Pizza dough without yeast

Today's article will be entirely devoted to cooking Italian dish- pizza. The variety of recipes for just one batch allows you to create it for every taste and preference, from the thinnest with a slight crunch to fluffy and tender, literally melting in your mouth. And the filling complements its perfect taste, adding an indescribable zest.

On olive oil

From time immemorial, only olive oil was used in Italy, so almost all recipes use only it, but in our latitudes you can easily get by with refined sunflower oil.

Products:

  • Wheat flour – 0.5 kg;
  • Drinking water – 130 g;
  • Olive oil – 70 g;
  • Soda ash – 1⁄2 tsp;
  • Table salt - one teaspoon.

What we do:

Take a deep cup and sift the flour through a fine strainer. Add some water, oil and salt to it.

Mix everything thoroughly with a whisk. Quench the soda in vinegar and pour it into the dough. Also pour out the remaining water. And continue to stir the mixture.

If there is no soda, then it can be perfectly replaced with baking powder in the ratio of 0.5 teaspoon of soda equal to one teaspoon of baking powder.

The dough should be soft and elastic to the touch. But for this you need to knead it for at least ten minutes.

Pour tomato paste with herbs onto the workpiece and distribute evenly over the entire surface, then apply the prepared filling, cover with cheese and take to the oven.


Bake until golden brown.

With milk and eggs

This recipe is interesting not only because it contains milk, but also because it can easily be replaced with whey without compromising its taste. Italians are generally a very versatile people, on the one hand they are very cunning and resourceful, and on the other they have a very refined taste and sense of beauty, especially in preparing recipes for the national dish of Italy - pizza.

Product composition:

  • Wheat flour – 500 gr;
  • Eggs – 2 pieces;
  • Pasteurized milk - 0.5 cups;
  • Olive oil – 30 grams;

Operating principle:

Beat eggs with milk and olive oil until smooth.
Add ground wheat and table salt there. Stir without stopping.

Sprinkle the work surface with flour, place the dough on it and continue stirring.
The resulting mixture will be soft and very pliable.


Roll it into a ball and set aside for 30 minutes.

Then roll it out to the required thickness, fill it with pre-prepared slices and bake until crusty.

With melted butter

This recipe is for those who love a creamy taste in pizza. The butter should be melted first, and then added, or immediately purchased melted. Regular butter does not have such a rich taste and simply will not give the same effect, so be sure to use ghee.

Product composition:

  • Ground wheat – 500 grams;
  • Butter – 150 grams;
  • Egg – 1 piece;
  • Refined sugar – 1⁄2 teaspoon;
  • Baking powder - one teaspoon;

Cooking method:

Heat the oil in a saucepan placed over a pan of water and mix it with refined sugar and salt.
Separately, mix the egg and pour into the oil. Pour baking powder into it and continue stirring.
Pass the ground wheat through a fine strainer and pour into the dough. Stir until a soft consistency is obtained.

Yeast dough recipes

Traditional Italian pizza is almost never prepared without adding yeast. And even though its preparation takes longer, the result completely covers all these shortcomings.


The simplest yeast dough

Let's start with, perhaps, the simplest, but very tasty recipe. I believe that for housewives who have never prepared yeast dough, this method is suitable like no other.

Ingredients:

  • Wheat flour – 750 grams;
  • Drinking water – 250 grams;
  • Yeast – 2 packs;
  • Granulated sugar – 1⁄2 teaspoon;
  • Table salt – 15 grams.

Let's start:

Heat the water slightly and add sugar to it, stir until completely dissolved. Then dissolve dry yeast in it. Add 1⁄2 part flour. Mix everything again and set aside for 25 minutes.

Take the second part of the flour, add salt to it and pour it into the dough in parts. Knead the dough. It will stick to your hands, so it is better to lubricate them with oil.



Place it back in a warm place for a couple of hours. Then knead it again and divide it into parts. And then roll out each part into the desired shape, put the filling on them and bake until golden brown.

With olive oil

And this method contains a minimum set of products and only the addition of olive oil makes it different from simple yeast dough.

Product composition:

  • Wheat flour – 750 grams;
  • Drinking water – 250 grams;
  • Granulated sugar – 10 grams;
  • Dry yeast – 2 packs;
  • Olive oil – 20 grams.

Let's start:

Heat water with sugar, mix it with yeast. Add half the flour and let this mixture brew for thirty minutes.

Mix wheat flour with salt and add it to the dough. Mix well and place on a layer for half an hour.

Then mix the risen dough and divide into equal parts. Stretch or roll each of them into a layer of the required thickness, fill them with fillings and bake until cooked.

Dough according to Jamie Oliver's recipe

If you want to cook something very tasty, but no less simple, then just use any recipe from this famous chef. He specializes in these kinds of recipes. Today we will look at one of them in more detail.

Ingredients:

  • Wheat flour – 4 cups;
  • Drinking water – 500 grams;
  • Dry yeast – 2 packs;
  • Table salt – 20 grams;
  • Granulated sugar – 15 grams.

Actions:

Heat the water slightly and dilute the water with sugar in it, plus add another spoonful of wheat flour. Leave it in a warm place for 15 minutes.

Pour flour onto a work surface in a heap and pour the dough into the middle. Gradually, using a fork, mix them together.

When it stops stirring, remove the fork and stir with your hands.
We do this for at least fifteen minutes.

Then roll the dough into a ball and leave it in a warm place for half an hour.
Then knead into a thin layer, fill them with filling and bake in the oven one at a time for five minutes.
For the filling you can use completely different ingredients, from fish and eggs to various meats. Laying them both simultaneously and alternately.

If you don't want to cook ten pizzas at once, then simply freeze the preparations and use them as needed.

How to make the sauce

The main thing in any pizza is the sauce used. Just like pizza recipes, it can contain various ingredients, but it must certainly be ideally suited to the filling used and the dough used.

Compound:

  • Tomatoes – 0.4 kilograms;
  • Garlic – 1 clove;
  • Basil greens – 1 sprig;
  • Olive oil – 90 grams;
  • Salt, pepper - at your discretion.

Let's start:

Make a cross-shaped cut on the tomatoes and blanch them in boiling water for several minutes, then plunge into ice water. Then remove the skin from them and grind them on a grater.

Heat the oil and fry the tomatoes in it for five minutes, and then add the garlic.
Simmer them for at least two minutes and add basil to them.


Blanch this mixture for at least fifteen minutes. To evaporate excess moisture.
Cool the sauce and apply warm to the dough.

Beat eggs with sugar and salt for a few minutes.
Heat the oil and mix it with sour cream and eggs. Then add flour little by little.

When the consistency of the dough resembles sour cream, set it aside for half an hour in a warm place.
